This flavoursome salmon is very simple to make. If you'd like a stronger flavour, add a little cayenne pepper to the mixture.
Baked dijon salmon - serves 4
Ingredients for baked dijon salmon
- 4 fillets of salmon
- 55g melted butter
- 45ml Dijon mustard
- 25g dry bread crumb
- 25g finely chopped pecans
- 20ml honey
- 5g chopped fresh parsley
- 1 lemon, for garnish
- salt and pepper to taste
Method for making baked dijon salmon
- Preheat oven to 200C
- In a bowl, stir together butter, mustard and honey
- In another bowl, mix together bread crumbs, pecans and parsley
- Brush each salmon fillet with honey mustard mixture
- Sprinkle the tops of the fillets with the bread crumb mixture
- Bake salmon 12 to 15 minutes in the preheated oven
- Season with salt and pepper and garnish with a wedge of lemon
