Recipe: Baked dijon salmon

This flavoursome salmon is very simple to make. If you'd like a stronger flavour, add a little cayenne pepper to the mixture.

Baked dijon salmon - serves 4

Ingredients for baked dijon salmon

  • 4 fillets of salmon
  • 55g melted butter
  • 45ml Dijon mustard
  • 25g dry bread crumb
  • 25g finely chopped pecans
  • 20ml honey
  • 5g chopped fresh parsley
  • 1 lemon, for garnish
  • salt and pepper to taste

Method for making baked dijon salmon

  1. Preheat oven to 200C
  2. In a bowl, stir together butter, mustard and honey
  3. In another bowl, mix together bread crumbs, pecans and parsley
  4. Brush each salmon fillet with honey mustard mixture
  5. Sprinkle the tops of the fillets with the bread crumb mixture
  6. Bake salmon 12 to 15 minutes in the preheated oven
  7. Season with salt and pepper and garnish with a wedge of lemon
