Try and avoid mixing any other ingredients with it until it is light and smooth. The sourcream should also be room temperature which will make a better batter blend.
When you are beating the ingredients together, avoid beating too much air into them by mixing them on medium to low speed.
After the baking time is up, check and see if it is done by jiggling the pan. If the edges stay firm and the middle wobbles a little, it means it is done. Even though it may look underdone, let it set and cool in the oven. Avoid opening and closing the door as the change in temperature might cause cracking or sinking in the middle.
