Ham Salad Mini Tortillas
- 4 eight-inch flour tortillas.
- 3/4 cup light cream cheese.
- 1 small cucumber, peeled and sliced thin.
- 4 large slices baked ham.
- 2 medium tomatoes, sliced thin.
Place a tortilla on a chopping board. Spread 3 tablespoons creamcheese and top with cucumber, ham, and tomato slices. Roll up the tortilla pressing down firmly then cut wrap into 4 sections. Repeat with each tortilla to serve 4, or multiply doses for more guests.
Haloumi Cheese Fingers
- 1/2 tablespoon olive oil.
- 170g haloumi cheese, cut into 1cm thick sticks.
- 2 teaspoons fresh lemon juice.
- 1/4 teaspoon dried oregano black pepper to taste.
Heat the olive oil in a pan over medium heat. Add the haloumi sticks, and cook 1 to 2 minutes or until it turns light golden-brown. Sprinkle with the lemon juice, dried oregano and black pepper.
