Folding is a technique used to mix ingredients thoroughly without knocking the air out of the mixture or leaving it deflated.
Folding is best done using a rubber spatula.
- Pour the lighter mixture into the heavier mixture
- Cut down into the centre of the bowl and sweep the spatula up the side of the bowl, scooping the mixture from the bottom up to the top
- Work in a large figure of eight, rotating the bowl as you work
- Continue until thoroughly mixed, scraping the sides and the base to incorporate all of the ingredients
