Cooking techniques: Folding

Folding is a technique used to mix ingredients thoroughly without knocking the air out of the mixture or leaving it deflated.

Folding is best done using a rubber spatula.

  1. Pour the lighter mixture into the heavier mixture
  2. Cut down into the centre of the bowl and sweep the spatula up the side of the bowl, scooping the mixture from the bottom up to the top
  3. Work in a large figure of eight, rotating the bowl as you work
  4. Continue until thoroughly mixed, scraping the sides and the base to incorporate all of the ingredients
