A generous layer of icing can turn simple cakes into spectacular ones. Learn how to frost cakes like a pro with these simple steps...
- Make sure that the cake is completely cooled and brush off any loose crumbs from the surface
- Place the bottom layer of the cake on a plate lined with grease proof paper
- Place about half a cup of filling onto the top of the bottom layer and spread it evenly with a knife or narrow metal spatula
- Leave to set for five minutes then place the top layer on top
- Place around one third of the frosting in a bowl and add a couple of dashes of milk to thin its consistency. This will be the base layer
- Spread this mixture over the entire cake to smooth any remaining crumbs
- Let the first coat dry for around 20 minutes
- Spread the sides of the cake with the thicker frosting, working from top to bottom and rotating the cake as you go
- Ensure that the spatula is well coated with frosting as you go along - this will prevent it from picking up any crumbs
- Wipe the spatula before you put it back into the frosting
- To frost the top of the cake, place a mound of frosting in the centre and spread it out evenly over the surface using the spatula
- Smooth the frosting in long strokes, moving in one direction
- Repeat this motion until the frosting is smooth on the tops and sides
