Mozzarella is the most common cheese ingredient for pizza. Made from buffalo milk, it melts to a gooey consistency and has a brown top making it a great cheese to have on the decorated dough filled with toppings.

Another type of cheese which is often used in pizzas is pecorino. It is made from ewe's milk. It might be a strong hard cheese with its pungent smell, but pecorino gives the pizza a different and wonderful taste.
