These tasty banana muffins are a perfect treat for breakfast on the weekends. By making your own you can ensure that these moreish muffins are healthy and additive free.
Banana muffins - makes 10
Ingredients for banana muffins
- 250g self-raising flour
- 125ml milk
- 75g melted butter
- 115g caster sugar
- 2 large, ripe bananas
- 2 medium eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp bicarbonate of soda
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- pinch of salt
Instructions for making banana muffins
- Preheat the oven to 190C
- Mash the bananas
- Sift the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg together in a large bowl, add caster sugar and stir through
- Beat together the eggs, vanilla extract, melted butter and milk in a second bowl. Add the mashed banana and stir
- Make a well in the centre of the dry ingredients and add the egg mixture, stirring until it is a lumpy paste
- Set paper cases into the moulds of a muffin tray and spoon in the mixture until almost full
- Bake for 20 to 25 minutes
- Allow muffins to cool for 10 minutes before serving
