Recipe: Black bean veggie burger

Make a delicious veggie burger from scratch with this simple recipe. It's also a great recipe to whip up at a barbecue - just grill for around 8 minutes on each side instead of baking.

Black bean veggie burgers - makes 4

Ingredients for black bean veggie burgers

  • 1 can black beans, drained and rinsed
  • 1/2 green bell pepper, chopped
  • 1/2 onion, cut into wedges
  • 3 cloves garlic, peeled
  • 1 egg
  • 1 tablespoon chilli powder
  • 1 tablespoon cumin
  • 55g bread crumbs

Method for making black bean veggie burgers

  1. Preheat oven to 190C and lightly oil a baking sheet
  2. Mash black beans with a fork until thick
  3. In a food processor, finely chop bell pepper, onion, and garlic
  4. Stir into mashed beans
  5. In another bowl, stir together egg, chilli powder and cumin
  6. Stir the egg mixture into the mashed beans
  7. Mix in bread crumbs until the mixture and holds together
  8. Divide into four patties
  9. Place patties on baking sheet and bake for about 10 minutes on each side
