This traditional Hungarian recipe is filling but simple, and is a cost effective way to feed a large group or family. Add ham or bacon for a meatier twist.
Breakfast casserole - serves 10
Ingredients for breakfast casserole
- 6 potatoes
- 8 eggs
- 225g margarine
- 450g sour cream
- salt to taste
Method for making breakfast casserole
- Preheat oven to 175C
- Bring a large pot of salt water to the boil
- Add potatoes and cook until tender but still firm (around 15 minutes)
- Drain, peel and slice the potatoes
- Place eggs in a saucepan and cover with cold water
- Bring water to the boil and remove from heat
- Cover and let the eggs stand in hot water for 10 to 12 minutes
- Remove from the water, peel and slice
- Layer potatoes and eggs in a casserole dish, sprinkling each layer of eggs with salt, and use potatoes on the top layer
- Over low heat, melt the margarine with sour cream
- Pour over potatoes and sprinkle lightly with salt
- Bake in preheated oven for 30 minutes
