Recipe: Champ

This creamy champ goes perfectly with sausages or pork. The quantities given will create six servings.


  • 1.35kg potatoes, scrubbed
  • 1/2 pint milk
  • 85g butter
  • salt and white pepper
  • 1 large bunch spring onions, finely chopped


  1. Boil the potatoes in salted water until soft
  2. Drain and remove from the pan
  3. Leave to cool a little and then peel
  4. Mash thoroughly
  5. Boil the milk and add to the potato
  6. Add the spring onions
  7. Season and stir
  8. Make a well in the centre of the potatoes and add the butter
  9. Serve immediately
