Chocolate brownies are hard to beat, and they're easy to make. This recipe is a great one to get your kids involved in - as long as they promise not to fight over who gets to lick the bowl!
Creamy chocolate fudge brownies - makes 16
Ingredients for chocolate fudge brownies
- 180g unsalted butter
- 200g dark chocolate, finely chopped
- 3 large eggs plus 2 extra egg yokes
- 2 tsp vanilla extract
- 180g light brown sugar
- 2 tbsp plain flour, sifted
- 1 tbsp cocoa powder, sifted
- pinch salt
- 150g Oreos or similar, broken into pieces
- icing sugar, for dusting
Method for making chocolate fudge brownies
- Preheat the oven to 180C/350F/Gas 4
- Lightly grease a 20cm square baking tin with butter
- Melt the rest of the butter and the chocolate in a bowl above some hot water. Stir until the mixture is smooth
- In a separate bowl, whisk the eggs, extra egg yolks and vanilla extract together until the mixture becomes fluffy
- Gradually add the sugar, stirring continuously. Keep whisking until the mixture becomes stiffer
- Pour the chocolate into the mixture, adding around the sides so as not to knock the air out. Beat until the mixture has a silky texture
- Add the flour, cocoa powder, salt and about half of the chocolate biscuits. Stir until it is well mixed
- Pour the mixture into the cake tin and distributed the rest of the biscuits on the top, pressing them into the mixture slightly
- Bake in the oven for around 25 minutes. Unlike with cakes, you don't want a skewer to come out clean - the brownies should be slightly gooey in the middle
- Allow to cool in the tray, then cut them into squares and dust with icing sugar
Tips for making chocolate brownies
- You can substitute the chocolate biscuits for chopped nuts, dried fruit or honeycomb
- If you find the brownies too rich, use half dark chocolate and half milk chocolate
- Serve warm with a dollop of vanilla cream
