With Pancake Tuesday just around the corner, why not try out a new recipe for those pancakes? This one will help you to create tall, fluffy pancakes - perfect for using up all those leftover ingredients in the cupboard.
Pancakes - makes 8
Ingredients for pancakes
- 180ml milk
- 125g all-purpose flour
- 2 tablespoons white vinegar
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted
- cooking spray
Instructions for making pancakes
- Combine the milk and vinegar in a bowl and set aside for 5 minutes
- Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl
- Whisk the egg and butter into the "soured" milk
- Pour the flour mixture into the wet ingredients and whisk until smooth
- Heat a large skillet over medium heat and coat with cooking spray
- Pour 1/8 of the batter onto the skillet and cook until bubbles appear on the surface
- Flip with a spatula and cook until browned on the other side
