Recipe: Fluffy pancakes

With Pancake Tuesday just around the corner, why not try out a new recipe for those pancakes? This one will help you to create tall, fluffy pancakes - perfect for using up all those leftover ingredients in the cupboard.

Pancakes - makes 8

Ingredients for pancakes

  • 180ml milk
  • 125g all-purpose flour
  • 2 tablespoons white vinegar
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, melted
  • cooking spray

Instructions for making pancakes

  1. Combine the milk and vinegar in a bowl and set aside for 5 minutes
  2. Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl
  3. Whisk the egg and butter into the "soured" milk
  4. Pour the flour mixture into the wet ingredients and whisk until smooth
  5. Heat a large skillet over medium heat and coat with cooking spray
  6. Pour 1/8 of the batter onto the skillet and cook until bubbles appear on the surface
  7. Flip with a spatula and cook until browned on the other side
