Recipe: Japanese dumplings

These delicious prawn dumplings are perfect for either a snack or as a sophisticated starter. Lovers of spice can add more chilli or use chilli oil in the dipping sauce.

Japanese dumplings - makes 30

Ingredients for the dumplings

  • 400g cooked prawns, chopped
  • 100g cabbage, finely chopped
  • 100ml water
  • 30 dim sum wrappers (gyoza wrappers)
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 0.5cm piece fresh ginger, grated
  • 1 garlic clove, crushed
  • 1 tbsp vegetable oil

Ingredients for the dipping sauce

  • 75ml soy sauce
  • 50ml black rice vinegar
  • 1 tsp sesame oil

To serve

  • fresh chilli, chopped
  • spring onions, sliced

Instructions for making Japanese dumplings

  1. Mix the prawns, cabbage, sesame oil, soy, ginger and garlic in a bowl
  2. Hold one gyoza wrapper in the palm of your hand and spoon one teaspoon of the filling into it
  3. Wet the edges of the wrapper with a little water and pinch them together to create a fan shape
  4. Repeat until all the dumplings have been filled
  5. Heat the oil in a large frying pan and the dumplings for about 2 minutes, until crisp
  6. Pour in the water
  7. Reduce the heat, cover the pan and cook the dumplings for 5 minutes, until soft
  8. For the dipping sauce, mix the soy sauce, vinegar and sesame oil together in a bowl
  9. Serve the dumplings sprinkled with the spring onion and chilli
