Recipe: Lemon dijon chicken

This zesty recipe is a great way to prepare flavoursome chicken in less than 30 minutes. The quantity of the ingredients can be adjusted to taste.

Ingredients for lemon dijon chicken

  • 2 skinless, boneless chicken breast halves, cut into cubes
  • 1/2 lemon, juiced
  • 1/4 lime, juiced
  • 4 tablespoons Dijon mustard
  • freshly ground black pepper
  • Creole seasoning to taste

Method for making lemon dijon chicken

  1. Place chicken in a skillet over medium heat
  2. Pour in lime and lemon juices, and stir in Dijon, black pepper, and Creole seasoning
  3. Cook, turning chicken occasionally, until the chicken pieces are done (around 15 minutes)
