Recipe: Masala chai

There is no fixed recipe for masala chai (which loosely translates as spiced tea in Inidan). Brewing chai can allow you to experiment with different tastes and combinations. A typical masala chai will include spices, black tea, milk and sugar or sweeteners.

Basic ingredients may include:

  • 2 cups water
  • 3 - 4 tsp tea leaves
  • 1 chunk dried ginger
  • 3 - 4 crushed cardamom pods
  • 3 whole cloves
  • 1 piece cinnamon
  • 1 - 2 whole black peppers
  • sugar
  • milk

Simply boil the water then add all the ingredients other than the milk and sugar and boil again for 20 seconds. Leave the tea to stand for two minutes and then add the milk and sugar to taste.
