Recipe: Rabbit burgers

If you've never tried rabbit before, these juicy burgers will make for a great introduction. Serve with chunky chips and tomato ketchup for comfort food with a difference!

Rabbit burgers - serves 2

Ingredients for rabbit burgers

  • 350g minced rabbit
  • 100g minced pork belly
  • 1 onion, finely chopped
  • 4 sage leaves, finely chopped
  • 3 tbsp olive oil
  • salt and pepper to taste

Instructions for making rabbit burgers

  1. In a large bowl, mix together all of the ingredients apart from the olive oil
  2. Season with sea salt and freshly ground black pepper
  3. Divide the mixture in half and shape into two burgers
  4. Heat the oil in a frying pan over medium heat
  5. Heat the burgers for 4-5 minutes on each side, until golden brown and cooked through
