Recipe: Shortbread

Shortbread is a traditional Scottish biscuit that was once only served at Christmas and New Year (Hogmanay). Luckily today, these delicious buttery biscuits are served year-round, so why not try making them today?

Shortbread - makes 20 pieces

Ingredients for shortbread

  • 120g butter
  • 55g caster sugar
  • 180g plain flour

Instructions for making shortbread

  1. Preheat the oven to 190C
  2. Beat the sugar and butter together until the mixture is smooth
  3. Gradually stir in the flour to form a smooth paste
  4. Place the mixture on a work surface and roll out until it is about 1cm thick
  5. Cut into shapes (rounds or fingers are the most popular) and place on a baking tray
  6. Sprinkle with icing sugar and chill for 20 minutes
  7. Bake in the oven for around 20 minutes, until light golden brown
  8. Place on a wire rack to cool

Tips for making shortbread

  • The secret to good shortbread is to use a high quality butter
  • Add 1/2 cup of chocolate chips to the shortbread batter for chocolate chip shortbread - or dip half the shortbread piece into melted chocolate for another chocolaty treat
  • Cookie cutters can be used to create shaped shortbread (e.g. hearts or stars)
